Okay So it isn't really $40.00 dollar granola, but it should be, and at our first go around it was! The recipe is actually the Barefoot Contessa's Cherry Almond Coconut Granola and it is amazing, especially with plain goat yogurt! Yummy! Anyway, our friend went to the national healthy food store to buy the ingredients and well, when Honey is 10.00 a bottle you can imagine the rest. Now don't get me wrong that honey is freaking awesome and I am sure that actually adds to the taste of the granola, it just made us laugh that the starter to this project was well, okay it wasn't 40.00 it was 37.00 :)
However, you should try to make this because it is so good, so much fun to make, and face it homemade food is just better for you. And if you are like us you can buy the healthy ingredients without all that garbage added to it!
Oh a slight modification I make to it, I add 1/2 cup of honey instead of 1/3. and I add more dried cherries cause I like fruit. I also eat this with plain yogurt (goat or greek so that helps)

Ingredients
- 4 cups old-fashioned rolled oats
- 2 cups sweetened, shredded coconut
- 2 cups sliced almonds
- 1 1/2 cups dried cherries, chopped
- 1/2 cup vegetable oil
- 1/3 cup good honey
- 2 teaspoons ground cinnamon
Directions
Preheat the oven to 350 degrees F.
Toss the oats, coconut, almonds, and cherries together in a large bowl. Pour the vegetable oil and honey over the oat mixture. Add the cinnamon, and stir with a wooden spoon until all the oats and nuts are coated with the liquids. Pour onto a sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even golden brown, about 25 to 30 minutes.
Remove the granola from the oven and allow to cool, stirring occasionally. Store the cooled granola in an airtight container.
